Mei Li says Thank you....

Hi there!!! Happy Monday! hope you all had a fantabulous weekend...

here's mine... featuring Mei Li from Sister Stamps 1st release!! isn't she adorable??!! Yay! my mission to use up the 1st release is now complete... i have the 2nd release to work with now... =D back to my card, i was tempted to use red and black but decided to got with a different combo... so i took out my lovely stash of Moonrise papers by SEI.... this line has an oriental feel to it and i just loved the colors so as much as i didn't want to break out these papers, i did... and i'm glad i did... hehe... since i used red on the image i had to find a way to incorporate the color to the card because the papers had no red whatsoever in them... so i added some half pearls... the sentiment is from Mari & Me stamped with gold colorbox pigment ink... and i also used a new nestie i just added to my spellbinder stash... LOVE the circle eyelets!! do you likey?!?

oh and since we are on the subject of anything goes, i figure i give you all a little teaser.... hehehe!! guess this could be part of the challenge too... =D

here's the mini blueberry cheesecakes i made on friday for my besties wedding reception.....
and because i LOVE chocolate, i made some Oreo delights to take too....
mmmmmmmmmmmm..... oh yah, can you feel the calories being added to your bod?!?! hehehe

Baking 101 #2 - Mini Cheesecakes

Happy Monday!! Yup!!! i'm teasing you all again with this ONO-licious yummy treat... LOL... i know "STOP it Kris!!" LOL... anyway, i had a request from my "sweet" friend Amy to share this scrumptious dessert recipe... mmmm... Mini Cheesecakes

2 box cream cheese (8 oz. each)
3/4 cups of sugar
2 eggs
1 teaspoon vanilla
1 box vanilla wafers
1 can fruit topping of your choice
baking cups

Preheat oven at 350 degrees. Line muffin pans with baking cups. Place 1 vanilla wafer in each cup. Mix cream cheese, sugar, eggs and vanilla until well blended. Fill baking cups 2/3 full. Bake at 350 for 15 minutes. Cool. Top with fruit and refrigerate. Makes about 24-30, depending on how much you fill each cup.

Pretty simple huh! now, head into your kitchen and bake these babies up... your guests will LOVE them... great for holiday parties or even those just because days... =D

Yummy Delight

**Please be advised this is a long post... lots of pictures...**

Okay, as said, here's my Baking 101... besides paper crafting i do love to bake... well, when i have time... =D Today i'll share with you an "Oreo Delight"... now, these are very sinful, so if you're on a diet, i do not recommend them... you won't stop at one... LOL... Let's begin...

Ingredients:
24+ foil lined muffin cups (you do't have to but it gives a better foundation)
24+ oreo cookies 2 (3 oz.) instant chocolate pudding
2 (8 oz.) pkg, cream cheese 2 1/2 c. milk
3/4 c. sugar 1 (12 oz.) cool whip
2 eggs 1 tsp. vanilla

Make sure you have all your ingredients... don't be like me and notice at the last minute there's no vanilla... Preheat oven to 375 degrees.
Line muffin pan with muffin cups and put a whole oreo in each cup
Beat cream cheese, sugar, eggs and vanilla, until fluffy <-- whatever that means because mine don't come out fluffy... =D
Fill cups 2/3 full. Bake for about 20 minutes...
These is what it looks like when they are finished baking... set them aside to cool
that darn elf took a bite out of it... hehe... sorry had to make sure it was done and it had taste
Mix pudding and milk (remember don't follow the box directions) fold 1/4 - 1/2 of the cool whip into the pudding mix
Top each cooled cup with this mixture
garnish with cool whip. i also add mini chocolate chips... sometimes i'll use chopped walnuts... just depends
and there you have it.... simple, easy, great for take overs and gatherings... makes about 24-30 mini delights...
these are so yoummy i made a 2nd batch for myself... LOL, no wonder i'm so plump... hahaha! hope you'll give these a try... you can always change it up... instead of pudding, maybe using some fruit pie filling or vanilla pudding instead... the creations with this yummy treat are endless... or for Halloween lovers, maybe some icky creatures coming out of the whip... =D Happy Baking and have a wonderful day! it's finally friday!!!
